Chocolate Macaroons

These cookies are so frightfully delicious that it is hard to keep noshing on them all day long! Although they do require dehydrating time of 12 to 24 hours, they are worth the wait! Just make extra!!

Ingredients:

* 3 cups unsweetened raw coconut flakes
* 1 1/2 cups raw cacao powder
* 1 cup maple syrup (or raw agave nectar)
* 1 Tbsp vanilla extract
* 1/2 Tsp. himalayan salt
* 1/3 cup coconut oil

Method:

Mix all the dry ingredients well first then add the coconut oil, maple syrup and vanilla extract. Use a small ice cream scooper for spooning and shaping the cookie sizes. This seems to be a good size. Place on teflex sheets about 1 – 2 inches apart. Allow to dry overnight and check in the morning. You want the outside to be dry and the inside to still be chewy. Store in an airtight container. Makes about 2 dozen.

White Macaroons:

Replace the cacao powder with ground almonds and dehydrate the same way.
