This is a great introduction to raw food desserts as it simply tastes fresh and delicious. A friend of mine cried over this pie while at a Raw Food training when he ate it for the first time because he couldn't believe how good it tasted! Crust: * 1 cup walnuts, soaked * 1 cup pecans, soaked * 1 cup chopped dates * Pinch of himalayan salt Filling: * 4 apples, peeled, cored & sliced * juice from 1/2 fresh lemon * 1/3 cup maple syrup * 1/3 cup ground almonds * 1/2 tsp. ground cinnamon * 1 tsp. vanilla extract * 1/2 tsp. himalayan salt Decorative Topping: * 1 cup sliced almonds, soaked * 1 cup dried cranberries * 8 fresh gooseberries * 1 handful soaked goji berries * 1/2 cup candied dried nuts (from Pumpkin Cheesecake recipe). Method: Mix nuts and dates in a food processor for the crust. Press nut paste into a pie plate. Place sliced apples in a bowl and toss gently with the lemon juice. Add maple syrup and stir. Sprinkle on spices and toss before adding the ground almonds to the final mix. Layer the apple slices into the crust. Cover pie top with sliced almonds and then decorate the rim and top with the gooseberries, goji berries and candied dried nuts. Makes 8 servings.
